my thanksgiving contributions...

I've been a busy cook in the kitchen this morning.
(We're going to Chris' sister's house in a few hours. She makes the turkey and the rest of us bring different side dishes. Of course, I over do it because this is the holiday of excess and too many things sounded too good to not make...)

I made a small turkey for our family to have 'leftovers' and I just winged it. I placed it in my le creuset (thanks, mom- I still love cooking with this!) over chopped carrots, celery, and onions. I placed a lemon cut in half in the cavity. I rubbed olive oil, kosher salt and herbs de provence over the outside and wah-la. I was amazed at how moist and delicious it turned out.

I made my family's sweet potato casserole recipe that is unique in that it doesn't have a marshmallow topping, but a brown sugar/pecan crumble. You could almost eat this side dish as a dessert instead.

I made the rolls that everyone requests my Granna to always bring to Thanksgiving. I always thought she made them from scratch like a good Texas girl, but she finally told me the secret. She just uses Rhode's frozen dinner rolls and brushes them with butter before baking. Ha!

I made these bacon wrapped jalepeno poppers that light your mouth on fire for an appetizer. (I already popped two in my mouth to make sure they were acceptable.)

I also made a cream cheese spread for crackers using this chipotle raspberry sauce from Costco. I keep a bottle of this around during the holidays because it's super easy for a last-minute appetizer. Also, the girls at work will riot if I don't bring it in to our potlucks.

And, my risk was to make this pie (that I've never made before) but knew the Pioneer Woman wouldn't let me down. I've been looking forward to this pecan pie but after watching her Thanksgiving throwdown with Bobby Flay, I almost switched to his pumpkin bread pudding... almost.
