Family dinners have been slightly interesting lately. Ethan will eat anything I put in front of him, but he stuffs his mouth and is done in about 2-5 minutes. And then he throws whatever is left on the floor. I received 'love & logic' advice to say "so sad. dinner is over." and take his food away. But, he seems unphased as if to say, "yeah, lady. That's why I threw it." Charlie is more picky and has been leaving a lot on his plate. I've heard to just keep re-introducing foods, even if the kid says they "don't like it" so the green vegetables keep re-appearing. I'm trying out some recipes that sneak the veggies in. I know Jessica Seinfield is famous for that. Tonight we made this easy tostada and I was amazed at how much more 'fun' dinner is when they can put their own toppings on. In the future, I hope for dinnertime to be a time we all look forward to where we can share our days with each other without fears of food flying or meltdowns, but for now- I'm just accepting the phase we're in...
Turkey Tostada
Jessica Seinfeld’s recipe:
Heat the oven to 400. Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the onion and cook, stirring until softened, 3 to 4 minutes. Add the turkey and cook, crumbling with the back of a spoon until no longer pink, 5 to 6 minutes.
Meanwhile, pour 2 tablespoons of oil on to a sheet pan and coat the tortillas. Bake, flipping the tortillas halfway through, until crisp, 8 to 10 minutes.
Stir the tomatoes, chili powder, salt and pepper into the skillet and simmer, about 3 minutes. Make a well in the middle of the turkey mixture. Add the beans and mash with the back of a spoon. Continue to cook, stirring, until heated through.
Top the warm tortillas with the turkey mixture and add salsa, lettuce, avocado, cheddar cheese and sour cream to taste.
